Does Anyone know of a source for cheap touchscreens that can be used with this?
I was looking for a screen in the 3" 5" range for another project but gave up on it due to costs of small touchscreens. This thing is just begging for one. I for-see a home built handheld media player / computer in My future. :)

Cool. Do you have links?

(Including links will be help other readers leverage your sources/knowledge, not to mention saving a lot of time. :) )

If the video chipset supports low frame rates and some degrees of freedom for the timings you might patch a driver to send RGB and you can connect a car lcd panel. Still expensive though.
If the mentioned 1.27mm header routes some lines like I2C and/or serial USART you can adopt a side-panel display. But this is more for lcd4linux than a real desktop solution.

You could get a 7" Proximus touch screen and use a usb strip (IDK what they are called, the thing where you plug it into a USB port and it has 4 or so ports on it?) and plug it in to that I think.
