Maybe this older fun project (2002) of mine, "TclMusic" could be revived on the Pi? Tcl and Tk are already in Raspbian, but I'll have to see what library I can find (or make) for sound output.

Notes in text notation and graphic rendering, a small piano keyboard to play on, and then MIDI output...

I don't think that work. great idea but working on music with these kind of tools.
as mad said, Tuxguitar struggles on more than a couple of notes at a time using timidity as the engine but it may work better feeding an off computer keyboard through jack or some less heavy soundfonts in timidity.
