Raspberry Pi IoT Hub - WiFi setup

We want to send raspberry pi IoT boxes to different customer locations around the world. Normally the customer would setup up the wifi settings via a log file or serial interface, but we want to move the product to Windows IoT platform. So we have an pilot project use to test the system and installation process.

We plan to use Raspberry Pi 3 running Windows 10 IoT for the pilot and need to figure out how the end customer in different parts of the world can setup the WiFi on the Raspberry Pi? It would be good to have may be different methods such as plug in a monitor and setup via a suitable GUI, SSH into the box with a default IP address etc

Just wondering if any one had any recommendations to suggestions?
