There are currently no user updatable settings in the EEPROM, but that is probably going to change.

Check the documentation, there are three updatable settings (BOOT_UART, WAKE_ON_GPIO and POWER_OFF_ON_HALT) in the version 2019-07-15.

If you want an unavailable feature, just configure, compile and install your own kernel. See the kernel source and the official documentation:
