The issue is I need to power the project from a single supply. I'm also using a 5V 10A supply. This should be more than sufficient to handle the power requirements but when I play anything I see the low voltage indicator crop up on the pi. And the high pitched issue continues to exist. Failed to me...

Something is wrong with your system. I have no problem creating a working desktop shortcut with proper icon using the add to desktop feature.. Though for me there is no point as the Chromium start icon is already in the taskbar in the default installation. I second this. My Raspbian Stretch desktop...

Happened to me too

tried 4 different card readers on the same card, no effect

examined the microSD card itself, specially the contact pads, there was some sort of contaminant on the pads
cleaned the contacts with contact cleaner until shiny
popped it up again

Got 1 RPiZ with USB dongle connected to the WiFi router.... no problems so far
Got 3 RPiZW connected to the Wifi router.... all systems green!

3 were all installed using NOOBs, one is microSD card transferred (by mistake) from RPi3 and it worked well.
