i think the pi-0-w wifi connection would be the main bottleneck rather than the usb-sata hdd/ssd interface.

SSH and VNC were both mentioned earlier in this post, Has the OP rejected the idea of using an existing pc to take remote control of the pi cli via SSH or the Desktop environment over VNC??? In both cases the Pi once on the local network can be used headless without extra keyboards mice or monitors....
