The opto isolators do not help with false triggers. I had a false trigger from opto-isolated GPIO pins. My guess is that the edge does not get triggered through the GPIO line at all. C'mon guys. KISS = keep it simple stupid.

The important thing is to get good photos. You don't need all the extras if the system does not deliver good photos. So try out the camera, focus and lighting first. When you are happy with this part you can waste time on gimmics.

I hate to spoil a nice idea. But... The Pi camera is difficult to focus on the eyes correctly. Any pictures where the eyes are out of focus are worthless. Trying to mix applications running on jessie and stretch on the same Pi requires a lot of tinkering. There is a lot of work being done to get RetroPie to run on stretch so I assume that this problem will go away by itself. I also bough one of these. The panel has a small connector on the back that connects to the Raspberry Pi connector. The touch works through these pins.

The touch use pins MOSI, MISO, MCLK (19,21,23) and two pins on the opposite side P6 and CE1 (22,26).

GPIO bouncing is not really caused by the GPIO pin. Sometimes the glitches come though the ground or power planes also. In QLC+ I added 200ms of hysteresis to take care of the problem in software.
