What do you mean by "Can I have the control to modify how the recording is done once I click the start recording button?" You can control raspimjpeg (the heart of RPi Cam Web Interface) with commands that are written into a pipe as described in the wiki: http://elinux.org/RPi-Cam-Web-Interface

- Now everytime a video capture is stopped, the circular buffer is reset. This prevents wrong video results if there is a delay between two videos that is smaller than the size of the buffer.
