Nevermind, I found the issue.

For archiving purposes, and for anyone that might be having the same issue:

I had to install pulseaudio (sudo apt-get install pulseaudio), and reboot.

That added default to arecord -L

Found a solution!

I had to reinstall the OS since an old program was interfering with new installs.
I ended up using xbindkeys, it works flawlessly.

How can I connect the Raspberry Pi to IFTTT without using webhooks?

I know you could use webhooks if the RPI is publicly accessible, but I would like to avoid that. My objective would be asking google assistant to turn on a GPIO pin, then that info magically transferring to the Pi and it running a python script. Any way to do this?
