I don't have the pinout header so if you say it is possible I'll setup the SD and the USB stick on the Pi 0 W and then I'll move both on the Pi 0

The *easiest* way would be to do the setup on a Pi B (any version). If you're doing an embedded system, the better alternative is to use a CM. Then you can design a carrier board with whatever interfaces you need. I have a Pi 3 B but why should be better than the Pi 0 W having different hw? the Pi ...

in production I don't need internet access and the SD will be read-only for suddenly shutdowns so that's the reason for the USB stick external storage from your answers I deduce that the easiest way would be to setup on the Pi Zero W via WiFi the SD and the USB stick and then move both on the Pi Zer...

I bought the Pi Zero w/o W because I don't need network, it has lower power consumption (probably because it doesn't have wireless but maybe I could get the same disabling it), and it is cheaper.
I need portability so I can't use a NAS.

I decided to use the linked adafruit solution for the OS, and an external USB device ext4 formatted for the images storage.
I'd use a USB SD adapter, but some say that a USB stick is better. is it true? and why?

but in that case I'd need another switch to shut down the Pi, I know that to turn off 1 or 2 switches takes the same time, but to have to turn off both switch each time I stop the motorbike would be annoying so by using a USB stick or SD adapter I could use Raspbian and switch the SD from read-only ...

I had thought about a USB stick or an SD card in a USB adapter, this way the read-only SD should be bombproof, but what about the USB stick? or an SD card in a USB adapter would be better?

If completely read-only sd will full protect it from damaging, adafruit solution is enough for me because I'm just using the Raspberry as a brain for a robot battery powered.

It sets up symbolic links to /tmp (which is in RAM) as a way to allowing to set / RO and not wedge the system. That is the general idea but it might be a bit rough for some applications.
