Sounds to me like you had a bad SD card, and makes me wonder about how Etcher does it's sanity check. If you tick the box for Etcher to verify the card, it checksums it and compares the checksum against on created while it was writing the unzipped image file. The Pi can't see the camera ("detected 0").
Have you verified that both ends of the camera cable, as well as the SUNNY connector, are inserted and seated correctly?

It looks like a DNS problem. The output from timedatectl shows not synced. No return from the google.com ping. All symptoms of DNS not working correctly. You might post the last 15 or so lines of /etc/dhcpcd.conf if you are using a static IP. If you are using dhcp then: cat /var/run/dnsmasq/resolv....

One way is to check your router's active associated MAC addresses vs. MAC addresses assigned to your interfaces.
Assuming nothing is connected to the ethernet port, if you disable the onboard wifi (per above) then your USB adapter is the point of WIFI connection.

IMO, a 3B+ is overkill, if it's only task is to monitor the garage door. A Pi0WH (with headers installed, so no soldering) will suffice. I monitor my entry doors with Pi0Ws + Pi Cameras + Pikrellcam. Works great. Your use case will probably use much less CPU and memory than mine. Are you doing this...
