Thanks for the tips guys. I've explored the use of the tightvnc viewer in reverse connection (listen) mode and it might just do the trick provided our network can hold up. Note: It's an old projector with only VGA and composite av so I'll either us the composite of the VGA via an active HDMI to VGA adaptor.

I was having a lot of stability problems with a RT5370 "WiPi" dongle until I forced the wireless router to use a 20MHz channel width (instead of 40MHz or "Auto".) It used to be [CTRL]+[ALT]+[BKSPC] but I think that's disabled in the stock Raspbian config. [CTRL]+[ALT]+[F2] to get a login then using the kill command usually works.
