AFAIK Ubuntu Server is running without a GUI.

You can just remove X from your startup scripts anyway, shouldn't be a huge problem..

1) Takes a shot with webcam every minute.
2) Compares the shot with previous one.
3) If there is a difference, someone has entered the room
4) Use espeak to generate greeting.
