I just use those Velcro Command strips, or zipties because everyone knows that zipties are the most professional option :D .

I have the Smartipi for the official 7" touchscreen. I use it in my car as an android auto client for google maps and the such. The case is very adjustable and comes with an adjustable stand and two little feet things (which I used to Gorilla Tape the thing to my dash).

Hey vloke this os actually works pretty good. I am using the Pi display in my car with this os.

If you want speed and power get a pi3b(well more speed and power than all other pis).
If you want something small, cheap, yet still able to do everything (software wise) the pi b rev 2 can do get the zero w.
Both have wifi and Bluetooth.
Or you can just buy both.

if you absolutely want a heat sink pull the small square one off an old computer motherboard, cut it in half with a dremel tool, then cut the halves in half so you have four squares. You can connect two displays but the pi doesn't support putting different programs on separate displays. The displays will have the same thing on them.
edit: I forgot to add you need a hdmi splitter as well to get the dual monitor, but the displays will still show the same thing.

If you want a desktop you could flash raspbian, ubuntu or noobs.https://www.raspberrypi.org/downloads/
After use win32 disk imager if you use windows, dd or gnome disk utility if you use linux to flash the os to a spare SD card.

Why don't you just use the pi for something else? Retro game console (easy using retro pie), install Windows Iot core os onto it, give it to your kids. Don't trash it, there are many things you could do with it. There are hundreds if not thousands of projects for pi on the Internet.

I have a 2.8" pitft plus on my pi 3. So far that works on all of my pi's. Adafruit makes bigger sizes of the pitft. The official display will work too. I don't have one but they are made to work with all pi's except the Zero (no DSI connector on Zero).
